What To Make For A Vegetarian Thanksgiving
Everyone has an ideal version of Thanksgiving, and usually those include some kind of meat dish. Traditionally, large turkeys or medium-rare roasts are front and center at the dining table, but these days, vegetarian plates are making more of an appearance. Whether you are a student working on a vegetarian project for an online culinary course or have a vegetarian family member, try out these dishes during the holiday seasons.
Butternut squash and spinach lasagna
This recipe was adapted by Comfort Food and featured by the New York Times
You’ll need:
- Six sheets of no-boil lasagna noodles
- A large butternut squash
- 2 eggs
- 1 pound of ricotta cheese
- 1.5 cups of whole milk
- 1.5 cups of grated Parmesan cheese
- 1 bag of frozen spinach (chopped)
- 1/2 cup of all-purpose flour
- 3 tablespoons of unsalted butter
- Salt and pepper
Start by preparing the squash. You will need to roast it at 375 degrees Fahrenheit for one hour. Set aside to cool, remove the skin and then use a food processor to puree until smooth. Add salt and pepper to taste.
Next is the spinach mornay. Melt your butter and add the flour. Cook for two minutes and then add milk. When the mixture comes to a boil, add the parmesan cheese and frozen spinach.
Begin preparing the ricotta cheese mixture. Combine the ricotta cheese, eggs, Parmesan, salt and pepper. Set aside for later.
Now you can assemble everything in a 9-by-13-inch pan. The first layer should be your spinach mornay, followed by a layer of lasagna. Add a layer of the ricotta cheese mixture. Repeat the process. The final layer should be spinach mornay. Cover the pan with aluminum foil and bake at 350 degrees Fahrenheit for one hour.
Sweet potato hummus
You’ll need:
- 1 large sweet potato
- 15 ounces of chickpeas
- 2 cloves of garlic (peeled)
- 2 tablespoons of fresh lemon juice
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- salt and pepper
Begin by wrapping the potato in foil and bake at 425 degrees Fahrenheit for 45 minutes. Once the potato is thoroughly cooked, place it in a food processor with the rest of the seasoning until smooth. If the mixture is too thick, consider adding a little water or extra virgin olive oil to lighten it to the desired consistency.
