How to Make Pâte de Fruit
Talk about a candy crush! Who knew delicious candies could be so simple to make? Pâte de Fruit, a French candy recipe that’s been made for centuries, have all the advantages of being delicious without the preservatives and artificial flavors. A great treat for children and parents alike, it can literally be made out of any fruit of your choosing. Passion fruit? Why not! Strawberries? Of course. Blood orange? You bet!

Pate De Fruits:
1 lb. Apricot Puree
2 oz. sugar
0.4 oz. pectin
1 lb. sugar
3 oz. glucose
0.33 oz. Lemon juice
Sugar for coating
1. Boil the puree and add the pectin mixed with the 2 oz of sugar. Bring to a boil, stirring often.
2. Add half the sugar and bring the mixture to a boil. Add the glucose and the remaining sugar. Continue boiling the mixture until it reaches 225 degrees.
3. Add the lemon juice, stir and let the mixture stand until the bubbling stops.
4. Pour into pan which has been lined with parchment or a silicone mat. Let the mixture stand until set, usually overnight.
5. Cut in 1 inch squares or desired shape and size. Roll the squares in sugar and serve.
**Other fruits can be substituted for the apricot puree and the mixture can be poured into silicone molds**
