How To Make Oeufs a l’Anglaise
Want to dress your breakfast up to impress? This oeufs a l’Anglaise is the perfect way to do just that. By taking a number of simple ingredients like some eggs over easy, toast and a veal (or chicken or beef) gravy, you can make an easy breakfast look (and taste) like it came from a gourmet restaurant. Trim up the sides of your toast by using a circle cutter, do the same for the eggs and then top it with a healthy portion of gravy. But you don’t have to stop there! You can sub out the gravy for a hollandaise or Bernaise sauce or add any of your favorite breakfast items like slices of bacon, avocado, sausage, etc. Any way you want it, oeufs a l’Anglaise should definitely work its way into your morning routine!

Oeufs a l’Anglaise Recipe
For Fried
Eggs as needed
Toast as needed
Gravy as needed
1. Fry the eggs in a frying pan.
2. Trim them to be circular with a plain cutter and place each on a slice of toast the same size and shape. Serve accompanies with veal gravy or sauce of your choice.
For Poached or Soft Boiled
Eggs as needed
Toast as needed
Brown butter as needed
Your choice of cheese as needed
1. Place the poached or soft boiled eggs on a round or oval slice of toast, sprinkle with grated cheese mixed with a little cayenne, pour a little brown butter over and glaze quickly under a salamander or in a very hot oven.
