Few things are as important to a chef as knowing kitchen sanitation. It’s that important. Up there with basic culinary fundamentals, knowing how to properly clean you kitchen is just about the most pertinent thing to do. Knowing to use different cutting boards for meat and vegetables, how to properly disinfect countertops and other cooking surfaces and the best products to use to do so is a major part of running a successful kitchen. Common sense and traditional home kitchen carry you a lot of that but there’s certain tricks and trades that can almost guarantee nothing will happen on your watch. After all, one small step and you could be dealing with a serious outbreak of foodborne illnesses which can be fatal in some cases. I know, no fun, right? Nothing could be worse for your business than to have word of something like that get out. It reflects poorly on the business, on the chef and can put the kibosh on an entire career. If only there were witness protection programs for chefs why may have had this happen in the past. Hey, I guess you could always change your name. But it doesn’t have to come to that.
