Wine Pairing For Your Guests

Escoffier Online’s Chef Mark Dowling and Ruth Chris‘s Michael Walton create a segment on wine pairing with a southwestern seared pork chop to help front of the house specialists choose a great tasting wine for their guests. It is importance for the chef to take the time to discuss the dish and wine with the service staff.  Communication is key, the better the server understands all components of the dish and wine, the better it will sell and the more praise it will receive!
