Oh, zoodles. How we love thee. No longer do we have to feel guilty about enjoying a good pasta dish because we’ve just carb-packed noodles with spiralized zucchini. Voila, pasta dishes made healthier. This zoodle version of shrimp scampi is the perfect example of just how much you can do with this new method! All the delicious flavors of shrimp scampi are captured—citrus, garlic, vermouth and seafood. The only difference is the noodle but that’s the best part—you can’t taste the difference. Zucchini is such has a way of just absorbing all the flavors around it. Who said health food had to taste bad?

Zoodle Shrimp Scampi Recipe

Ingredients:
1 lb large shrimp, peeled, deveined, patted dry
2 tbsp butter, unsalted
3 tsp fresh garlic, minced
3 tbsp dry white vermouth
2 tsp lemon zest
1 tbsp lemon juice
2 large zucchini
1 tbsp parsley, finely chopped

Directions:
1. In a large skillet, melt butter over medium heat. Once foaming has stopped, add shrimp all at once. Let shrimp cook for 1 minute without touching them, then add garlic, flip,  and cook for another 2 minutes.

2. Add in lemon juice and vermouth to hot skillet, scraping up any browned bit stuck to the bottom. Let cook until thickened, about 3 minutes. Add lemon zest and parsley and cook for 1 minute.

3. Add zoodles and cook for 2 minutes or until the noodles are slightly tender and the shrimp is warmed.

4. For serving, add in a pinch of freshly cracked black pepper, grated parmesan and/or a lemon wedge.
